Shrimp are an incredibly versatile seafood that can be cooked in a variety of ways. But, because of their smaller size and the nature of the meat, they can be very easy to overcook. The timeframe between perfectly cooked shrimp and tough, rubbery shrimp is very small, especially when cooking over an open flame. Plus, both sides of the shrimp need to spend an equal amount of time exposed to direct heat. Otherwise, you’ll end up with food that isn’t cooked all the way through. Not to worry though! Preparing the Shrimp
When grilling shrimp, you’ll want to get your hands on some jumbo or extra-jumbo shrimp. Be sure to set the shrimp out to thaw the day you intend to grill them since shrimp can go bad very quickly if left out. Once your shrimp are defrosted, remove the shell and tail. At this point, you should be able to determine whether or not you need to devein the shrimp, and if the vein is still there, get a sharp knife and gently pry the front of the vein from the flesh with the tip of the knife. If done properly, you should be able to get the whole vein out in one go.
Now that your shrimp are clean, run some wooden grilling skewers under cold water. This is to prevent the skewers from burning and potentially breaking on over an open flame. Then, take your skewers and push two of them through the middle of the shrimp so that there is about one inch of space between the skewers. Depending on the size of the shrimp, you should be able to fit four to six on every set of skewers.
Grill Time and Temperature
Now that your shrimp are ready, fire up the grill! Whether you have a gas or electric grill, get it up to around 385 to 400 degrees Fahrenheit. Be sure not to put the shrimp on before the grill heats up fully since this will change the cooking time and potentially leave you with undercooked shrimp.
Once the grill reaches the desired temperature, place your skewered shrimp on the grill. Overall, your shrimp should cook for about two to three minutes per side. You’ll know it’s time to flip them when you see those golden brown grill marks. Once the shrimp have that beautiful pink color, pull them off the grill and pile them onto a serving plate. Sprinkle a little lemon juice, melted butter and parsley on top, and before you know it, you’ll have perfectly grilled shrimp to enjoy down to the last bite.
