INGREDIENTS:
- 2lbs. of our Medium 31/40 Peeled & Deveined Tail-Off
- 1/2 lb. pasta of choice
- 1 cup of flour
- 1/4 cup of olive oil
- 2 tbsp. of butter
- 2 tbsp. Cajun seasoning
- 2 tbsp. green onion, chopped
- 1 tbsp. garlic, diced
- 1/3 cup Vermouth or dry white wine
- 1/4 cup pasta water, leftover
- 1 pint cherry tomatoes, whole
- Parsley, chopped
COOKING DIRECTIONS:
- Cook pasta as directed on package
- Batter thawed shrimp with flour & cajun seasoning and fry shrimp while pasta cooks
- Heat oil (cover pan about 1-2 inches)
- Place battered shrimp into oil; Fry until golden and set aside
- Melt butter in large sauce pan
- Add sliced tomatoes and simmer
- Mix-in green onion, garlic, & cajun seasoning
- Add vermouth and pasta water
- Sprinkle chopped parsley on top
- Add pasta to pan & mix well
- Plate & top with shrimp
- Enjoy!
