Recently, we had the pleasure of starring in a culinary experience hosted by Donna Dick of Recipe Designery. Our Gulf shrimp took center stage in a Mexican Shrimp Fiesta Class, held at the picturesque Serenity Knoll Farm in Jonesborough, TN, where attendees dove into the wonderful world of Mexican cuisine.

Meet the Chef

DChef Donna Dickonna is a lifelong cook. As a little girl, she learned inside the kitchens of her mother, aunt and close family friend. As an adult foodie, she eats local cuisine in her travels. She visits fine dining establishments whenever the opportunity presents itself, including Michelin-starred restaurants and a few James Beard finalists.

Her love of food steers her to explore multiple cuisine styles and master many of the world's most beloved dishes.

She has a strong commitment that allows her to create exceptional recipes, built on high-quality and organic ingredients while supporting local suppliers. She believes good recipes connect those loved, those lost and those present for every meal. When her son was diagnosed with a gluten allergy in 2002, she was unexpectedly pushed into the world of gluten-free cooking, which inspired her even further. In her "spare" time, she founded and now manages Recipe Designery.

Recipe Designery is a software project to help aspiring chefs create mobile-friendly digital cookbooks. Shrimp Showcase

Donna, a culinary enthusiast with a passion for sharing her expertise, led her eager class through an exploration of shrimp, discussing the nuances between Wild-Caught and Farm-Raised varieties. As the main attraction, our shrimp showcased its superior taste, texture and freshness, leaving a lasting impression on all who attended.

Donna highlighted the night by captivating demonstrations of two beloved Mexican shrimp dishes: the traditional Mexican Shrimp Cocktail and mouthwatering Shrimp Tacos. She used skill and finesse to guide her class through the intricacies of preparing these iconic dishes, infusing each recipe with her own unique flair and creativity.



Traditional Mexican Shrimp Cocktail

The traditional Mexican Shrimp Cocktail, or "Coctel de Camarones," is a zesty dish featuring succulent shrimp, crisp veggies and a tangy tomato-based sauce. With its refreshing flavors and vibrant presentation, it's the perfect appetizer for any occasion.

Donna expertly prepares our Medium 41/60 Count Peeled & Deviened Tail-Off Gulf Shrimp, describing the importance of seasoning and freshness. While the shrimp chill, she instructs the class to mix the zesty sauce, emphasizing balance and flavor. Then, she combines the shrimp and sauce, adding avocado for creaminess. With a final touch of garnish, the dish is ready. In moments, the class savors the vibrant flavors of Mexican Shrimp Cocktails, showcasing the chef's skill and guidance.

Shrimp Tacos

Shrimp Tacos, a Mexican favorite, blends Medium 41/60 Count Peeled & Deviened Tail-Off Gulf Shrimp with fresh ingredients in warm tortillas. Packed with savory seafood, crisp veggies, creamy sauces and zesty seasonings, they're a tasty, satisfying choice that highlights Mexico's culinary flair.

Donna showed the class how she prepares shrimp tacos. While Gulf shrimp are seasoned and cooked to perfection in a sizzling pan, she combines finely diced Roma tomatoes, onions, jalapenos and cilantro with lime juice to form a zesty pico de gallo,. Assembled on warmed tortillas with a sprinkle of optional Cotija cheese and a squeeze of lime, these shrimp tacos provide a flavor burst made to inspire every culinary student.
