Wild-Caught Shrimp from the Gulf of Mexico
Many kinds of shrimp are sold in grocery stores and online, including pond-raised and ocean shrimp, those harvested in U.S. Atlantic and Pacific coastal waters, and shrimp from around the globe. Here in Biloxi, Mississippi – the Seafood Capital of the World – we know that the best shrimp are caught wild and fresh in the warm waters of the Gulf of Mexico. That’s why we sell only wild-caught Gulf shrimp that are known for their unrivaled flavor.
Commercial fishermen harvest our ship from Texas to Florida, and use trawling nets and other methods. While the shrimp season may vary, it typically extends from spring to summer. The commercial fishing industry focuses more on sustainability and protecting waterways these days, and today all shrimp boats and equipment must be licensed and adhere to regulations to prevent overfishing.
Our State-of-the-Art Processing Facility
Shrimpers bring shrimp to our docks and unload them quickly to preserve their freshness and unbeatable flavor. Biloxi Shrimp Co. is proud to operate the region’s largest and most advanced shrimp processing facility, a 20,000-sq. ft. location where shrimp are sorted, frozen and prepared for shipping. With the latest equipment and an experienced team, we process nearly 13% of all wild-caught domestic warm-water shrimp in the nation and can process up to 125,000 lbs. of shrimp each day.
Shrimp are quickly sorted by size using self-calibrating optical laser equipment. This process produces a 3D analysis that determines each piece’s density, length and width. With this information, we can rapidly calculate the shrimp’s size with exceptional accuracy and consistency.
Our shrimp are individually quick frozen (IQF) for optimal freshness. As shrimp travel along a high-speed conveyor belt, they are blasted with extremely cold air for instant freezing. The IQF technique helps preserve the shrimp’s characteristic plumpness and tenderness and ensures every piece can be easily separated for even thawing.
Shipping to Your Door
Today, our innovative shipping process ensures they can be enjoyed by Gulf shrimp lovers across the country. After sorting and freezing, shrimp are packaged in 2-lb. bags that are heat-sealed to preserve freshness. Next, orders are prepared to ship with the following process:
- Bags are placed inside a reusable, insulated shipping container.
- Dry ice keeps the shrimp frozen.
- Insulated containers are placed inside attractive gift boxes.
- Gift boxes are loaded into recycled corrugated cardboard cartons.
Our shrimp keep their fresh flavor for 6 to 9 months in the freezer. After 10 to 12 months, your shrimp will still be edible, but you may notice less of our famous taste. Of course, most customers prefer to enjoy their order right away in their favorite shrimp recipes!
