INGREDIENTS:
- 2 lbs Extra Small 61/90 Count Peeled & Deveined Tail-Off Shrimp
- 1 cup of pico de gallo
- 1 sliced red bell pepper
- 1 cup of chopped lettuce
- 2 tablespoons of fajita seasoning
- Low fat tortillas
COOKING DIRECTIONS:
- Put a skillet over medium heat. Add red bell pepper and sprinkle with one tablespoon of fajita seasoning.
- Add shrimp to the skillet and cook, about one minute for each side, until they turn pink. Sprinkle second tablespoon of fajita seasoning over shrimp while cooking.
- Gather your tortillas and add lettuce, pico de gallo and then shrimp.
- Fold, serve and enjoy!
