Mango Shrimp Salad

MANGO SHRIMP SALAD

Ingredients:

Dressing:

  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp honey
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions:

  1. Cook the Shrimp:
    • Boil or sauté shrimp in a little olive oil for 2-3 minutes per side until pink. Let cool.
  2. Make the Dressing:
    • Whisk together olive oil, lime juice, honey, salt and pepper.
  3. Assemble the Salad:
    • In a large bowl, combine mango, tomatoes, cucumber, red onion and greens.
    • Add cooked shrimp and drizzle with dressing.
  4. Serve:
    • Toss gently, top with avocado and enjoy!
