Creamy Shrimp Bisque

CREAMY SHRIMP BISQUE

Total Time: 30-35 minutes

Ingredients:

  • 1 lb Jumbo 21/30 Count EZ Peel Wild-Caught Gulf Shrimp (peeled & deveined with shells set aside)
  • 3 cups seafood stock (or water)
  • 2 tbsp butter
  • ½ small onion, chopped
  • 1 small carrot, chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ½ tsp paprika
  • 1 cup heavy cream
  • 1 tbsp flour (for thickening)
  • Chopped parsley for garnish 

Instructions:

  1. Make Shrimp Stock:
    • Sauté shrimp shells in a saucepan with a little butter for 3-4 minutes.
    • Add stock (or water), simmer for 10 minutes, then strain and discard shells.
  2. Cook Vegetables:
    • Melt butter in a large pot.
    • Sauté onion, carrot and garlic until soft (about 5 minutes).
  3. Build the Bisque:
    • Stir in tomato paste, paprika, salt and pepper.
    • Pour in the strained shrimp stock and simmer for 10 minutes.
  4. Blend & Thicken:
    • Use a blender to puree the soup until smooth.
    • Stir in the flour mixed with 2 tbsp water to thicken.
  5. Finish with Shrimp & Cream:
    • Add shrimp and cook for 3-4 minutes until pink.
    • Stir in heavy cream and heat through.
  6. Serve:
    • Garnish with parsley and enjoy!
