BILOXI SHRIMP JAMBALAYA
Ingredients
- 2 pounds of Jumbo 21/30 Peeled & Deveined Tail-On Wild-Caught Gulf Shrimp
- 8 ounces of andouille sausage cut into slices
- 2 tablespoons of butter
- 2 tablespoons of paprika
- 1 tablespoon of cumin
- 1/2 teaspoon of cayenne pepper
- 1 can of diced tomatoes
- 1 large diced green bell pepper
- 4 diced green onions
- 2 cups of brown rice
- 3 cups of chicken stock
- Salt and pepper
Directions
- Cook and stir sausage in butter in a large stockpot over medium heat until brown (about 5 minutes)
- Add spices and vegetables into the mixture and continue to stir
- Add brown rice and chicken stock, bring to a simmer and then turn heat to low: cover and cook until the rice is tender (about 45 minutes)
- Stir in shrimp, add salt and pepper as needed and re-cover until shrimp are cooked through (about 5 minutes)
