You can double the recipe to use the full 2 lbs. in your bag. NOTE: 31/40 size means there are 31 to 40 of these shrimp per pound, so with this size, a serving will be 6 to 12 shrimp per person. If yours are 61/90 size, there are 61 to 90 shrimp in a pound, and a serving will be 10 to 17 shrimp per person.
